Easy & tasty crinkles

50 g butter
200 g dark chocolate (70%)
2 eggs
100 g icing sugar
1 coffee spoon vanilla sugar
210 g flour
1 pinch of salt
1 coffee spoon baking powder
icing sugar

In a heatproof bowl, placed over a saucepan of simmering water, melt the chocolate and butter. Than beat the eggs, sugar and vanilla sugar with a hand mixer until thick, pale and fluffy. Mix the melted chocolate and eggs. Mix the dry ingredients (flour, salt, baking powder) and add to the mass. Mix it for 15 sec with your electric mixer.
Cover with plastic wrap and refrigerate until firm enough to shape into balls (at least 2 hours or even overnight).
Preheat the oven to 170°C. Form the chilled dough into 2,5 cm balls and roll each sugar in the icing sugar. Put the balls on a baking tray and bake them for 12 mins. Be careful because if you overbake them they become dry. Your crinkles are perfect if the edges are slightly firm but the centers are soft.
